SUSTAINABLE FARMING PRACTICES

We integrate environmentally conscious methods into our farming and distilling. All of the grains and crops are grown locally.

A THOUGHTFUL DISTILLING PROCESS

Lars and Rachelle strive to reduce their overall waste in each step of the distilling process. In the distillation of our spirits we only keep the hearts of the distillation run (this means less product than cheaper spirits),

 

This leads to two things - a better tasting quality product right off the get go, as well as for the aged spirits. By putting a more quality product in the barrel to start, less aging is required to get a better final product.

AGED TO PERFECTION

Whisky is in a barrel for a minimum of 3 years. For those 3 years, there is no revenue, and several costs are incurred. A 200 L barrel cost around $500 to produce.

 

During the three years of aging, we lose about 12% in evaporation. (known as the Angel's Share).
